How to make one pot pasta

One-pot pasta is perfect for a quick, tasty meal, with minimal washing up and enough to last you 2-3 days!

Ingredients

  • 200g dried pasta (any kind is fine)
  • 1 tin (400g) chopped tomatoes
  • 500ml water or stock
  • 1 tsp garlic powder
  • 1 small onion, finely chopped (optional)
  • 1 -2 tbsp oil
  • 1 tsp dried herbs (such as oregano, basil, or mixed herbs)
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp chili flakes (optional)
  • 1 tsp sugar (to balance acidity, optional)

Optional Add-ins

  • Protein: Canned white beans, chickpeas, lentils, tuna, cooked chicken, sausage, or minced meat
  • Vegetables: Peppers, spinach, mushrooms, frozen peas, or carrots work well with pasta, but if buying fresh veg is out of your budget, a bag of frozen mixed vegetables works just as well!
  • Cheese: Grated cheese or a spoonful of cream cheese for extra creaminess.

Method

  1. If using meat, pre-cook in a large pot and set aside. Check out our how-to guide on cooking meat for help.
  2. Heat 1 tbsp oil in the same pot over medium heat. If using onion, add and cook until softened (about 2-3 minutes).
  3. Pour in the chopped tomatoes, water/stock, dried herbs and garlic, salt, pepper, and sugar (if using). Stir to combine.
  4. Add the pasta and any firm vegetables if using (like carrots and peppers). Stir everything together, ensuring the pasta is completely covered by the liquid.
  5. Bring to the boil, then reduce the heat to a simmer. Cook uncovered, stirring occasionally, until the pasta is tender and the sauce has thickened (about 12-15 minutes). If the liquid reduces too quickly, add a little more water.
  6. Stir in any quick-cooking vegetables (like spinach or frozen veg) and pre-cooked proteins in the last few minutes of cooking. Add in cream cheese if using.
  7. Taste and adjust seasoning if needed. Serve hot, topped with cheese if desired.
