How to make chicken curry
Although this recipe asks for curry powder, you can improvise with what ever spices you have on hand such as cumin, ginger and chilli powder.
Ingredients
- 1 tbsp oil
- 1 onion
- 1 clove garlic, minced (or ½ tsp garlic powder)
- 1 tbsp curry powder
- 1 can chopped tomatoes
- 2 chicken breasts, diced
- ½ cup rice
- Salt
Method
- Heat the oil in a large saucepan over a medium heat. Add the onion and cook for 5 minutes until softened.
- Add the garlic, cooking for a further minute.
- Add the diced chicken to the pot and fry for 5 mins.
- Next, add the curry powder and tomatoes along with a dash of salt and 250ml water, stirring through until mixed.
- Bring to the boil, lower to a simmer and cook on a gentle heat uncovered for 15 minutes. Add more water if it gets too thick.
- Meanwhile, cook the rice. Check out our blog on how to cook rice perfectly.
- Serve your curry over the rice, and dig in!
