Dr Ruth Price
Overview
Ruth graduated from Ulster University with a BSc Hons (first class) in Food Science and Technology with a Diploma in Industrial studies, followed by a PhD in Nutrition. She was appointed to her current role as Clinical Trials Manager in 2012 where she is responsible for supporting the design, approvals, implementation and monitoring of highly controlled human trials in various population groups, and the governance, legal and ethical issues associated with this work. The application of this work has provided Ruth with extensive experience in a wide range of research areas including dementia and technologies and devices to support health, such as wearables, point-of-care devices and clean water technology.
Her own main research area focuses on obesity, both prevention and treatment, and in measuring body composition, food choice and intake, and related eating behaviours. Ruth works closely with the School of Medicine at Ulster University in conducting first-in-human trials testing novel treatments for obesity.
In addition, Ruth works with a wide range of food companies to perform rigorous scientific testing of the potential health benefits associated with food products and dietary supplements, as well as in the discovery of new health benefits.
