This stir-fry is great for bulking out your pantry rice or noodles, making them last longer.
Ingredients
- 1 diced chicken breast / 1 cup chickpeas for a plant-based option
- 1-2 cups frozen stir-fry mixed vegetables (this pack from ASDA costs £1.75)
- 2 cloves garlic – minced (or ½ tsp garlic powder)
- 1 tbsp oil
- 2 tbsp soy sauce
- Pack of noodles or 1 cup cooked rice – check out our blog on how to cook rice perfectly
Optional Add-ins
- 1 tsp ginger (grated or powder)
- 1 tbsp honey
- ½ tsp chili flakes
Method
- Heat oil in a pan over medium heat. Add chicken if using and cook until golden brown. Remove and set aside.
- In the same pan, add more oil if needed. Stir-fry the vegetables for 3-5 minutes until slightly tender.
- Add the chicken (or chickpeas) to the pan along with the soy sauce, garlic and any add-ins. Cook for another 1-2 minutes until the contents of the pan have been mixed well.
- Cook the noodles according to the packet instructions, or grab your cooked rice. Mix into the stir-fry, and enjoy!
