The objective of this short course is to provide an overview of the manufacture and processing of egg and egg products and to outline the related legislative issues.

Note: It is suggested that participants should take IFST Short Course FOOD LAW & FOOD REGULATION before taking part in this course.

Content:

• Structure and composition of eggs

• Legislation relating to egg and egg product manufacture

• Relevance of legislation in the manufacturing process

• Overview of the egg and egg product industry including Lectures 3 hours Independent study 2 hours Self-assessment 1 hour Total 6 hours

Assessment

A multiple choice questionnaire will be offered to students as a tool for self-assessment of the acquired knowledge.
